Although paprika powder (paprika örölt) is sold in Tesco for example, the locals tend to buy homemade paprika from friends and markets.
The homemade paprika powder is cheaper than the supermarket paprika powder.
Below I will be showing you how to cook a traditional Hungarian stew (technically not a stew if you add sour cream) that Tünde cooked, using sour cream (tejföl). As this is a very simple meal to make, I am merely showing it to you for its basic ingredients and the way a native Hungarian would cook it.
STEP #1 - Prepare the ingredients. Chop 2 Small Onions into small diced/sliced pieces, chop 3 Large Chicken Legs into 9 evenly sized pieces and then chop 1 Large (regular sized, not beef tomato sized) tomato into tiny dices.
STEP #2 - Add 1 Tablesppon of Cooking Oil to a medium to large sized saucepan (i.e. 7 to 10 Inch saucepan) and then put that saucepan on a gas hob.
STEP #3 - Light up a gas hob to a medium-high heat and let the cooking oil heat up until it starts spitting. Now add the diced/sliced onions and very lightly brown them (fry them on a medium-high heat for about 3-4 minutes).
Very lightly brown off (fry for 3-4 minutes) the diced/sliced onions
What is a Medium Heat? - Medium Heat is when the gas flames circle the half-way point between a saucepan's dead centre (middle) and a saucepan's edge.
What is a High Heat? - High Heat is when the gas flames circle the edge of a saucepan without going over the saucepan's edge.
What is a Medium-High Heat? - Medium-High Heat is when the gas flames circle between Medium Heat and High Heat; which is usually about 1 CM away (small saucepan) or 1 Inch away (large saucepan) from a saucepan's edge, depending on the size of the saucepan.
STEP #4 - Add 1 Tablesppon of Paprika Powder to the now slightly browned onions together with the sliced/diced tomato, the sliced/diced white pepper (TV Paprika) and 200ml of water (to stop the onions from burning). Continue cooking (boiling) for a further 10 minutes.
STEP #5 - Switch the gas hob down to a Simmering Heat (very low heat); to slow cook the rest of the meal.
STEP #6 - Add the 9 pieces of Chopped Chicken to the saucepan and then add enough water to cover those 9 pieces of chopped chicken. Now simmer for 1 hour.
Various cooking stages - After 1 Hour 10 Mins the stew will be almost ready
STEP #7 - Stir in the sour cream mix - Mix 2 Tablespoons of Plain Flour with 400g of Sour Cream (Tejföl), place that mixture into the stew and simmer for a further 5 minutes.
Simmer cooked chicken - Add the sour cream and simmer for another 5 minutes
After 1 Hour 15 Minutes of cooking the stew should be ready. It is normally served with pasta.
